The Authentic Mexican Wedding Cookie

These little goodies should come out soft, but hold together just fine. In Spain, they are traditionally squeezed while still wrapped up, so that they hold together. Then they are unwrapped, and devoured.

For an even more authentic Mexican version try the following tips:

  • Substitute lard for butter (this may turn not entice you, but it is more authentic.)
  • Try doubling the cinnamon in the cookie
  • Instead of the sugary cinnamon coating, roll in sesame seeds.

If they do not taste like you expect right after you take them out of the oven, don’t panic. People, often prefer these cookies when they have cooled down.
