-1/4 cup store-bought vinaigrette

-1/4 cup (about 3) thinly sliced scallions

-2 tablespoons chopped cilantro or parsley

-1 teaspoon grated lime peel

-1 (15 oz.) can black beans, drained and rinsed

-1 cup frozen corn, thawed

-1/4 cup diced red bell pepper

1. In a food processor, combine tomatillos, onion, jalapeno, and cilantro with lime juice. Pulse until finely chopped; season with salt. Serve with chips, over seared fish, or with eggs.
