Speedy Huevos Rancheros

Time: 25 minutes. You can make these in minutes if you use store-bought salsa and canned refried beans.

Ingredients

  • 2 cupsstore-bought hot red salsa*
  • Vegetable oil for frying
  • 8smallish corn tortillas (5 to 6 in.)
  • 8eggs
  • 1 cupcoarsely shredded jack cheese, plus extra for sprinkling on beans
  • 1/4 cupchopped green onions
  • 3 tablespoonsgrated cotija or parmesan cheese
  • 2 teaspoonsdried Mexican oregano or 2 tbsp. chopped fresh cilantro
  • 2cans (15 oz. each) refried beans*, thinned with water if you like and warmed up in the microwave

Preparation

  1. Put 4 heavy dinner plates in oven and preheat to 200°. Heat salsa in a small saucepan over low heat, covered
  2. Fill a large frying pan with 1/2 in. oil and heat over medium heat until the handle of a wooden spoon bubbles when you stand it in the oil. Remove plates from oven. Using tongs, fry each tortilla 2 seconds per side. Drain against side of pan, then overlap 2 tortillas on each warm plate. Pop in oven to keep warm
  3. Reduce heat to medium low. Cook 4 eggs, gently spooning oil over yolks to set them, 2 minutes for firm whites and runny yolks
  4. Spoon about 3 tbsp. warm salsa onto each plate of tortillas. Using a slotted spatula or spoon, transfer 2 eggs to each plate, draining against side of pan first, and top with another 3 tbsp. salsa. Keep warm in oven while frying and plating remaining 4 eggs. (You may have to increase the heat a little for the second batch.
  5. Sprinkle eggs with jack cheese, then green onions, cotija, and oregano. Spoon beans alongside and top with jack cheese

Tortilla Soup

Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, sliced
  • 1 chipotle in adobo sauce, minced
  • 1 tablespoon chili powder
  • 2 teaspoons kosher salt
  • 6 cups chicken broth, low-sodium canned
  • 1 cup corn kernels, fresh or frozen and thawed
  • 1 ripe tomato, chopped
  • 1 cup shredded cooked chicken
  • 1/2 cup cilantro leaves
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • About a dozen corn tortilla chips, broken a bit
  • Lime wedges, optional

Directions

Heat the oil in a medium saucepan over medium heat. Add the onion, garlic, chipotle, chili powder, and salt and cook until the onion softens, about 5 minutes. Add the chicken broth, bring to a boil, reduce the heat slightly, and simmer, uncovered, for 10 minutes. Add the corn and cook for 5 minutes more.

Pull the saucepan from the heat and stir in the tomato, chicken, cilantro, and lime juice. Divide the tortilla chips among 4 warmed bowls, ladle the soup on top, and serve with lime wedges, if desired.

Know-How Get every last drop of juice from those little limes. Before halving, microwave them for a few seconds and roll them under the palm of your hand to release the juice from the pulp.

Add a swirl of chile and homey tortillas to comforting chicken soup and you have a bold hug of a meal.

Warm Layered Bean Dip

Ingredients

  • 1(19 ounce) can refried beans
  • 2teaspoons chopped garlic
  • 2green onions, finely chopped
  • 1/3cup salsa (mix with beans)
  • 1lb cooked ground beef
  • chili powder
  • 2 -3tablespoons salsa (mix with meat)
  • 2cups shredded cheddar cheese
  • 1cup salsa (as a layer itself)
  • 2avocados, pitted and peeled
  • 1/4cup chopped cilantro
  • 3tablespoons finely chopped red onions
  • 2tablespoons lime juice
  • 1/2teaspoon salt
  • 1cup sour cream
  • tortilla chips

Directions:

  1. In a bowl, mix beans, garlic, gr onions and salsa. Spread on bottom of greased casserole dish or serving dish
  2. Season cooked hamb meat with chili powder and salsa to taste. Layer on top of beans
  3. Sprinkle cheese next as a layer then hot sauce layer
  4. Microwave until piping hot, making sure to cook evenly
  5. Meanwhile, in a bowl mash avocadoes til chunky. Stir in cilantro, red onion, lime juice and salt
  6. Spoon avocado mixture over hot dip mixture and spread sour cream on top. Sprinkle w/remaining green onions. Serve w/chips and hot sauce, if any left.
